Blackberry Sponge Pudding

My cycle route to work is full of blackberries so I’m making the most of it and picking a punnet most evenings. The freezer is getting full so I thought I’d make up a recipe:

Ingredients

300g fresh west oxfordshire blackberries
75g fairtrade golden caster sugar
75g margarine
1 free range organic egg
125g organic plain flour
1.5  tsp baking powder
little bit of milk to mix in

Method

  1. Simmer all but a few of the blackberries with 2 tbsp water then purée through a sieve.
  2. Beat the butter, sugar and eggs. Add the flour and baking powder and mix add a little milk if it needs it.
  3. Put 6 tbsp blackberry purée into the basin. Top with the sponge and remaining blackberries.
  4. Microwave on high for several lots of 1 minute, when it starts to look done put a knife in (it will come out clean when it’s done).
  5. Serve with any remaining purée and berries.

Serves between 1 and 3
