My cycle route to work is full of blackberries so I’m making the most of it and picking a punnet most evenings. The freezer is getting full so I thought I’d make up a recipe:
Ingredients
300g fresh west oxfordshire blackberries
75g fairtrade golden caster sugar
75g margarine
1 free range organic egg
125g organic plain flour
1.5 tsp baking powder

A nice 5k run from the office to Charlbury and back through the park. Dave Harris and I did this as part of his training for the Blenheim 10k.
